Last night’s dinner was a semi success. Semi because I put too little meat and an overdose of veggies. Quantity wise, I could probably have fed four people with this dish. Yes… I’m still having some problems with portion control.

Once again I forgot to snap a photo so you’ll just have to take my word for it that it wasn’t too bad. It did past the hubby’s taste test after all and if you know anything about my hubby, you’ll know he’s got quite a rigid taste test.

I modified a recipe I took from Healthy Chinese Recipes. I figured that the website had proven itself recipe-worthy after a 100% success hit rate, and it was probably safe to try another recipe from their menu. I admit, I also stole some ideas from a few other sites I checked out, but I’m afraid I can’t recall the sites…

The sauce tasted okay, but I’d happily welcome any suggestions and comments that could help improve this dish. Anyway here is the recipe for the dish I made yesterday (it might be worth while either reducing the veggie quantities or you can increase the quantity of meat if you intend to feed more people):

Ingredients:
1 Chicken breast fillet, cubed
3 Tbsp KFC batter mix
1 egg, beaten
1 zucchini, diced
1 carrot, diced
3 small tomatoes, diced
1 Onion, chopped
1 Tbsp Light Soy Sauce*
1 Tbsp Oyster Sauce*
3 Tbsp Tomato Ketchup*
1 Tbsp Plum Sauce*
1 Tbsp Sesame Oil*
1 Tbsp brown sugar*
Dash of Vinegar*
Dash of Pepper*
100ml Water

Method:
Coat each cube of chicken with egg followed by KFC batter mix.
Deep fry the chicken and leave to cool on some paper towels (to soak up the excess oil).

Place the chicken into a bowl. Add seasoning ingredients* and water. Mix well.

Heat a little cooking oil in a wok.
Stir-fry onion pieces until fragrant.
Add chicken with seasoning. Add veggies (if you prefer your veggies a little softer, you can nuke them in the microwave for a couple of minutes before adding them into the wok).
Stir over low heat for a few minutes. Serve.
